Baking With Caslon & Co : Gluten Freee & Nearly Vegan Cupcakes


I love to whip up cakes every so often but having been diagnosed with celiacs with egg allergy and now have to re-learn the art of baking. I do like to whip up tasty cakes for my sons though who aren't gluten free but I hope they will enjoy the foods all the same. 

I was recently asked if I wanted to pick something from Caslon & Co's kitchen linen items and straight away I knew it would be the oven glove as my previous my ASDA owl glove (sad I know) was ripped to shreds by my puppy, still being the thrifty chick that I am I was adamant it would do for now but this opportunity was a godsend as my owl one was starting to burn my hands in certain spots. 

The Caslon & Co over glove is complete luxury in comparison to my previous one. It's made using thick cloth and as you can see it has the prettiest vintage pattern that was created using antique wooden printing blocks. It looks really pretty, even more so in person. 

I decided to put it to the test with some baking with my sons. These yummy scrummy cakes were the end result. 


We had a fab time making these and my sons had an amazing time eating them too. The over glove made it so much easier getting the pans in and out of the oven and I couldn't feel a thing, my old one used to leave me burnt in spots and I still felt the heat a little all over the rest of the glove. 

The recipe I used was this one if you fancied making some yummy cupcakes too. 

Recipe

2 1/4 cups gluten-free plain flour
1 3/4 cups sugar 
2 TSP gluten-free baking powder (Dove's Farm or Dr Oetkar)
1/2 TSP Bicarbonate of Soda
1/4 TSP Salt 
1 1/2 cups of almond or soy milk
1/2 cup of oil (rapeseed, vegetable etc)
1 TSBP lemon juice 
2 TSP Vanilla extract 

Icing 

1/2 cup dairy free margarine (soy spread)
4 cup icing sugar
3 TBSP almond or soy milk
1 1/2 TSP Vanilla extract 

Of course, if you wanted to make this entirely vegan you could omit the Flake decoration, this was added so that my son would try them but you could totally grate some vegan chocolate over them or add some nuts, fruit or even leave them plain.
